From Decadent Chocolate Cakes to Simple Fridge Tarts, this collection has it all

It is so wonderful to see the diverse desserts which grace peoples dessert tables over Eid. In doing research for creating an Eid series, I have learnt that many of the desserts we all enjoy as South Africans feature on families Eid spreads as well.
I have seen more and more people saving my favorite Pineapple Fridge Tart over the last few weeks, I assume in preparation for Eid. I thought it would be wonderful to help you all along with collating some of my best desserts for you all.

Pineapple Fridge Tart

I cannot believe it has taken me this long to share a pineapple fridge tart recipe on my blog! It ticks so many boxes, especially during summer. It is fresh and fruity, it is make ahead, it requires no oven time ….
The tropical flavours of this dessert lend itself well to a lighter end to a wonderfully indulgent feast, and as hard as you resist, there is always going back for seconds.

Peppermint Crisp Tart

Ok, so you all know by now that this was a bit of a journey. I have shared a few versions of a peppermint crisp tart on my page over the years, so you can rest assured that I have been refining it over time. The single biggest critique I have had over the years is that the dessert can sometimes feel too sweet, so I have tried to address that with my version.
Come rain or shine, this dessert is always a crowd pleaser.

Cremora Tart

Now I must admit that unlike many South Africans, I did not grow up eating this tart, and when I saw it online, I was very skeptical. I did not believe that something which contains no eggs or gelatin could set so perfectly. I guess I was wrong – the coffee creamer gives the recipe amazing body – this sits somewhere between a mousse and a fridge cheesecake.
The recipe is so incredibly easy that I have shared it on Instagram rather than my blog.

Decadent Chocolate Cake

Sometimes a cake that is deeply chocolatey, intensely fudgy and has soft chocolate buttercream just hits the spot. This is one such cake.

Orange, Cardamom and Polenta Cake

From reading many middle eastern recipes, I know that the nuts of choice are pistachios and the the grain of choice is semolina. Whilst I have been working on recipes which celebrate those ingredients, I thought of this orange, cardamom and polenta cake.
Bright, citrusy and very fragrant from all the spice this one goes down a treat.

Saffron Milk Cake

This cake is so unassuming, you would never believe the bright yellow hue it has once cut into it. The cake itself is very simple – saffron really is the hero of this cake. A bit of orange adds some brightness and touch of ground almonds gives additional moisture.
If unpretentious and unfussy is your kind of dessert, then this is the one. I could not help but add a saffron glaze to mine, but a simple dusting of icing sugar served with a dollop of whipped cream would do the trick too.

San Sebastian Cheesecake

Do we really need another one of these on the internet? This is the question I constantly ask myself when I consider recipes to create and share. The virality which this cheesecake has gotten in the recent past is understandable – it avoids messy waterbaths, it requires no crust and you do not have to worry about cracking and sinking, as that is all part of it’s charm.
Ok, so why bother with this one then? After a few trials, I promise that the addition of custard powder amps up the vanillla flavour and the custardy finish that this cheesecake has. Depending on the quality of vanilla which you use, the flavour can be a bit more muted and using the custard powder really brings that flavour through.

My Ultimate Chocolate Brownies

Much like a carrot cake, everyone believes they make the best chocolate brownies. I can’t attest to that as I have not tried them all – what I will say is that if you have followed my blog for a while, you would know that I shared 3 versions of this recipe.
Every so often, with techniques I learn and as I improve my baking knowledge, I retest old recipes and try and enhance them in ways that make for a better experience. Blooming the cocoa powder in the melted butter really helps to deepen the flavour and also produces a fudgier brownie.

Orange and Honey Madeleines

Orange blossom water was something which I discovered through reading middle eastern recipes, so it is only natural that I pay homage to the ingredient by including these Orange and Honey Madeleines in this list. Madeleines are little French cakes, but the flavours here are very Middle Eastern.

Passionfruit Cheesecake Ice Cream Cake

After a big heavy meal, nothing goes down quite like a refreshing ice-cream. Although if we are being honest, dumping a big tub of ice cream in the middle of the table is hardly a showstopping dessert. Cue this Passionfruit Cheesecake Ice Cream Cake. The recipe is deceptively easy with no churning and the freezer doing most of the work. I use a homemade passionfruit curd, but store-bought works as well.
