This year, I have created a delicious Diwali biscuit series which celebrate some truly iconic creations. I have also included family favourites that my mum, sister and aunt’s make regularly for us, to celebrate them and the richness they have brought to Diwali over the years. Strawberry and Almond Hungarian Tart

Now, why it is called a Hungarian Tart I actually have no idea, but receiving these on Diwali is a core memory for me and one which I truly enjoy. A buttery shortbread base and crunchy crumble encase a jammy middle to bring the perfect combination of buttery and jammy.
To cut through the sweetness, I have also included some fresh strawberries and a bit of almonds for extra crunch. A tried and test classic, with my own spin. If you prefer to omit the fresh strawberries, that is fine, but I would reduce the jam a bit or the tart will be too sweet.

These are my aunt’s specialty – they are homely, rustic and incredibly moreish. Requiring just a handful of ingredients, they showcase a melting moment type biscuit, but with a delicious custard flavour.
Using a combination of custard and vanilla is important to get that signature flavour. If you are using a cookie stamp, make sure to chill the biscuit after shaping, before baking.

When my sister was at school, she used to make biscuits as a side hobby to pay for additional tuition costs. These pecan nut biscuits featured as one of her most popular. Not just pretty to look at, the pecans in the dough really add warmth and toastiness too.
Toasting the pecans which go into the dough is an important step for maximum flavour, do not toast the pecan that goes on the top though, as that will burn when you bake them.
Let you creativity run free with keeping these as is, dipping half in milk chocolate and even taking it a step further and dusting the other half in caster sugar.

Orange and Almond Melting Moments

This is my take on the classic melting moments. The correct ratio of cornflour to flour to icing sugar give you a biscuit that barely holds together, but melts in your mouth.
Drawing on inspiration from travel as well as popular middle eastern flavour profiles, I have decided to flavour the dough with a bit of orange zest. A thin layer of buttercream in the middle, flavoured with a very sparing hint of almond essence and orange blossom water further adds wonderful dimension of flavour.

Lemon, Rose and Cardamom Biscuits

This recipe is a masterclass in flavour pairings – the floral, gentle flavours of rose pair wonderfully with the brightness of lemon and just a hint of spicy, warmth from the cardamom.

These biscuits are iconic in many Indian households – it is all about that signature crack and balance of spices which makes these incredibly moreish. I have tested many rounds of recipes before settling on this one which I quite liked.
The biscuit itself is quite simple to make, and whilst purists may criticize the use of butter, I find combining the ghee and butter give the best combination of crunchy and soft. By now you would know that I am all about adventurous flavours, so in addition to the signature cardamom and nutmeg, I also like to add some clove, cinnamon and a generous scrunch of black pepper.

Chai Spiced Millionaire’s Shortbread

A crisp, buttery base flavoured with chai spices meets a gooey caramel layer all finished off with a thin melting of dark chocolate.
