A lemony treat made with just three ingredients – lemon, cream and sugar.

A devilishly easy lemony dessert, which requires no baking and only three ingredients. It really cannot get any easier than this! The recipe is a great make ahead dessert, so you do not have to faff about it on the day of your dinner party.

The silkiness of the posset pairs well with a crunchy-type of biscuit. I have served them with cat’s tongue’s here.

FOR THE LEMON POSSETS

  • 600ml whipping cream
  • zest of 3 lemons
  • 80ml lemon juice
  • 150g caster sugar

METHOD

  1. Rub the sugar and the lemon zest together with your fingers.
  2. Place the sugar and the whipping cream into a medium sized saucepan and place on medium heat, bring to a boil and then simmer for three minutes or so. Make sure the sugar has completely dissolved.
  3. Remove from the heat and whisk in the lemon juice.
  4. Pour into ramekins, cover with cling film and let set in the fridge for at least 6 hours, ideally overnight.
