Almond, Semolina and Blood Orange Syrup Cakes

This sweetness in this simple cake can be controlled through the syrup which is poured on top I had some delicious blood oranges left over from this Vanilla Yoghurt Panna Cotta with Blood Orange Jelly, and came across this recipe for almond, semolina and blood orange syrup cakes by Donna Hay. I bought her book, Modern Cooking a while ago but have not had many opportunities to bake from it.…

Semolina Syrup Cakes

These mini cakes are delicious with a bright lemon flavour thanks to the syrup and the glaze I love baking cakes in mini brioche tins as it looks so much more pretty than in a normal tin. Flipped upside down, it creates the perfect base for a dollop of whipped cream or a drizzle of glaze. That is exactly what I have done here with these semolina syrup cakes. The…

Orange Cream Chiffon Cake

A pillowy light chiffon cake, with a delicious orange cream filling and orange cream cheese frosting I am currently in the process of changing jobs, much to my co-workers dismay – mostly because they will no longer be getting my spare baked goods after it is shot for the blog. Black Sesame and Ginger Financiers

Whilst Financiers are traditionally French, the flavour of these give them a little Asian twist Financiers are French tea cakes which are made with brown butter and ground almonds. These delicious bite size treats have a wonderful balance of nuttiness and fruitiness, thanks to the both the hazelnuts and figs If you are unfamiliar with what a friand is, you are not alone! I too only learnt of the concept recently. They are really just little cakes, traditionally made with ground almonds, include some fruit and are baked in an aspic mould. Apparently popularised in Australia by a French…

Lemon, Poppyseed and Olive Oil Bundt

This is a super soft bundt, with a fruity undertone from the olive oil, tang from the lemon and sweetness from the white chocolate ganache I recently ate an ice cream which was lemon, poppyseed, olive oil and white chocolate flavoured. It sounds like a lot of flavours, but worked surprisingly well. The olive oil really enhances the fruitiness of the lemon and the white chocolate cuts through the tang.…

Sweet Potato Loaf with Brown Butter Maple Frosting

This post is sponsored by McCain How do I like my vegetables, you ask? In cake, of course! You can then imagine how excited I was when McCain approached me to team up with them to create a few exciting recipes. I grew up eating McCain – being a family of five with a working mom meant quick freezer to table dinners. Whilst my mum used them in dinners, I…
