A lemony treat made with just three ingredients – lemon, cream and sugar.
A devilishly easy lemony dessert, which requires no baking and only three ingredients. It really cannot get any easier than this! The recipe is a great make ahead dessert, so you do not have to faff about it on the day of your dinner party.
The silkiness of the posset pairs well with a crunchy-type of biscuit. I have served them with cat’s tongue’s here.

FOR THE LEMON POSSETS
- 600ml whipping cream
- zest of 3 lemons
- 80ml lemon juice
- 150g caster sugar
METHOD
- Rub the sugar and the lemon zest together with your fingers.
- Place the sugar and the whipping cream into a medium sized saucepan and place on medium heat, bring to a boil and then simmer for three minutes or so. Make sure the sugar has completely dissolved.
- Remove from the heat and whisk in the lemon juice.
- Pour into ramekins, cover with cling film and let set in the fridge for at least 6 hours, ideally overnight.
