I have been having a bit of a moment with red velvet lately. I had a really good red velvet cake recently and was reminded that, when done right, it is so much more than just a drab tasting, red-coloured sponge!

These red velvet blondies are so fudgy and chewy, with a hint of chocolate. They come together in a flash thanks to a NOMU MiniMakes blondie mix, so really are no effort at all.

I have swirled a creamy cheesecake filling through them for a beautiful marble effect and a nice contrast to the chewy blondie. Enjoy!

Method

Method: red velvet blondies

  1. Prepare the tin: Grease and line a 20cm square tin.
  2. Make the batter: Add the cocoa and food colouring to the dry ingredients, then make the rest of the batter as per the box instructions.

Method: cheesecake swirl

  1. Make the cheesecake batter: Beat the cream cheese until nice and fluffy, then add the remaining ingredients and mix for another 30 seconds.
  2. Fill the tin: Add the blondie batter to the tin, but keep about 4 tablespoons aside. Then add the cheesecake batter on top of the blondie batter.
  3. Swirl: Add the reserved blondie batter to the cheesecake batter in little dollops and swirl.
  4. Bake: Bake for 30 minutes, or until the batter has set. Keep an eye on it, as the cheesecake can brown. If this is happening, just cover it with some foil.

What should I know about making these?

Can I make a smaller batch?

Yes, you can make half a batch with one box, but I opted for a double because they are so good!
