A deliciously simple, make-ahead dessert that is eggless and gluten-free.

The pairing of coconut and lime gives me such a tropical feel. I was tempted to throw in a splash of rum, but that may affect the setting ability of the posset, so I have not tested that yet. As litchis are in season, I've finished these off with them.

Method

Method: lime and coconut possets

  1. Infuse the cream: Add the strips of lime zest, sugar, salt, whipping cream and coconut cream and bring to a boil over medium heat. Reduce the heat to a simmer and heat for 5 minutes, until the cream has thickened slightly. Be careful that the cream does not boil over.
  2. Add the lime juice: Remove from the heat and stir in the lime juice.
  3. Strain and divide: Strain the mixture, using a sieve, into a wide measuring glass. Then divide the mixture between four small ramekins.
  4. Chill: Chill until the custards are no longer warm, then cover with cling wrap and chill until set. Six hours would do, but ideally overnight.

Method: decoration

  1. Whip the cream: Whip the cream until soft peaks form, then add in the icing sugar and whip to stiff peaks.
  2. Garnish: Spoon onto the custards, garnishing with the litchis, coconut flakes and lime zest.
