Lemon possets in patterned teacups from above, with raspberries, cat's tongue biscuits and a navy cloth

Desserts

Lemon Possets

A lemony treat made with just three ingredients – lemon, cream and sugar.

A devilishly easy lemony dessert, which requires no baking and only three ingredients. It really cannot get any easier than this! The recipe is a great make-ahead dessert, so you do not have to faff about it on the day of your dinner party.

The silkiness of the posset pairs well with a crunchy-type of biscuit. I have served them with cat's tongues here.

Method

Method: lemon possets

  1. Rub the zest into the sugar: Rub the sugar and the lemon zest together with your fingers.
  2. Simmer the cream and sugar: Place the sugar and the whipping cream into a medium-sized saucepan and place on medium heat, bring to a boil and then simmer for three minutes or so. Make sure the sugar has completely dissolved.
  3. Add the lemon juice: Remove from the heat and whisk in the lemon juice.
  4. Fill the ramekins and set: Pour into ramekins, cover with cling film and let set in the fridge for at least 6 hours, ideally overnight.
