Classic Chocolate Chip Cookies
Just a damn good chocolate chip cookie: crispy on the edges, soft in the centre, with toasted pecans and pools of milk chocolate.

This one does what it says on the tin: just a damn good chocolate chip cookie. No tweaks or innovations – sometimes a classic is best left unchanged!
Think typical crispy on the edges, soft in the centre, with pools of chocolate. Ok, technically they are chocolate chunk cookies, as I use actual chocolate in the recipe rather than chocolate chips, and it melts into puddles in the oven.
This is my traditional chocolate chip cookie. There's also my pan banging version, and finally my personal favourite, the pecan and white chocolate salted cookie. Which do you prefer?
A good quality chocolate and all the sugars are key to getting the perfect cookie. I usually make the dough in advance and bake them when needed. Enjoy 🙂

Method
Method: chocolate chip cookies
- Chop the chocolate: Roughly chop the chocolate and set aside.
- Toast the pecans: Roughly chop the pecan nuts and toast them in a pan over a medium heat for around 5 minutes. They have a tendency to burn, so be careful. Then set aside to cool.
- Cream the butter: Cream the butter for about two minutes until light and fluffy.
- Add the sugars: Then add the golden caster sugar, light brown sugar and muscovado sugar and continue to cream until light and fluffy. This will take about 5 – 8 minutes.
- Add the eggs: Add the egg and egg yolk and continue to cream until incorporated.
- Add the dry ingredients: Sift the flour, salt and bicarbonate of soda together and slowly add to the creamed mixture until well incorporated.
- Fold in the pecans and chocolate: Fold in the pecans and chocolate.
- Chill the dough: Place in the fridge for at least four hours, for the butter to firm up.
- Preheat the oven: When ready to bake, preheat the oven to 180˚ Celsius and line a baking sheet with baking paper.
- Shape the cookies: Roll the dough into ping-pong sized balls and space them well apart, as they do spread when baked.
- Bake: Bake the cookies for around 8 – 10 minutes, until the edges start to brown and the centre is well risen. Do not overbake or the cookies will not be chewy in the middle.
- Let rest: Let rest on the tray for a few minutes before removing, as they will still be fairly soft.
- Finish with salt: Sprinkle with salt flakes and enjoy!
What should I know about making these?
Can I make the dough ahead?
Yes. It needs at least four hours in the fridge anyway, so I usually make the dough in advance and bake the cookies when needed.
Can I use chocolate chips?
You can, but chocolate chips are made to hold their shape, so they will not melt into pools the way chopped chocolate does.
